VEGETABLE JALFREZI

  1. Heat a pan add butter. Add onion, beans, carrot, tomato, peas and baby corn.

  2. Add salt and stir fry on high flame for a minute. Also add yellow capsicum, green capsicum and red capsicum.

  3. Stir fry until the vegetables shrink slightly yet remain crunchy. Keep aside.

  4. In a large pan, heat oil. Add cumin, Kasuri methi, garlic, ginger and chilli. Saute until the spices turn aromatic.

  5. Now add ½ onion and saute until onions turn golden brown.

  6. Keeping the flame on low, add turmeric, chilli powder, coriander powder and salt, saute on low flame.

  7. Now add tomato and saute until tomatoes turn mushy, than add tomato sauce and mix well forming saucy consistency.

  8. Add in sautéed vegetables. Along with garam masala, mix well keeping the flame on high.

  9. finally, add coriander and enjoy veg jalfrezi with roti
