TOM YUM CHICKEN SOUP

Cut the ginger into slices, chop garlic, lemongrass, and set aside. Cut the chicken and tomato into dices.

In a pan take oil, ginger slices, garlic chop, lemon grass, saute for some time add chicken stock and lime leaf bring it to boil until the broth is very fragrant. Then add chili paste and cook well.

Add tom yum paste and reduce the flame to medium and simmer for 5-8 minutes.

Add diced tomato, gently simmer for 1-2 minutes. Add chilli and chicken and cook for 5-10 min.

Reduce the flame to low heat and adjust the thickness with corn flour then add coconut milk, Mix well and simmer till the flavor blend.

Check seasoning. Turn off the flame and finish it with green onion.
