PENNE ARRABIATA WITH VEGETABLE

    • Heat water together with salt in a pot. Bring the water to a boil.
    • On a medium to high heat, cook penne until the pasta is al dente.
    • In a colander or strainer, strain the pasta and set aside.
    • Blanch all the vegetable and keep it aside.
    • Peel and chop the red tomatoes.
    • Heat olive oil in a pan. Add finely chopped garlic and onion. Sauté it.
    • Add the crushed red chili flakes.
    • Next, add the tomato. Add salt as per taste and mix well. Cover the pan with its lid.
    • On a low heat simmer the arrabiata sauce for 10 to 12 minutes until the raw flavor and taste of tomatoes goes away.
    • When you see some oil specks on the sauce, this means that the arrabiata sauce is cooked.
    • Add basil, ground black pepper, salt and sugar.
    • Add the cooked pasta and blanched vegetable, mix very well, so that the sauce coats the pasta evenly.
    • Switch off the heat add chopped basil leaves and cheese.
