  1. Soak the rice noodles in hot water for 10 minutes.

  2. Drain, rinse in cold water and spread out.

  3. Heat a little oil in a pan.

  4. Fry the noodles for 60 seconds and keep aside.

  5. Heat some more oil. Add the onions, ginger and bean sprouts.

  6. Fry for a few minutes and add the cooked chicken, spring onions and garlic.

  7. Add the noodles and fry again. Pour in the Vegetable stock add salt and soy sauce.

  8. Mix well and Serve hot.
