  1. Wash and boil the rice and keep it aside. Transfer the rice in a bowl and add ½ cup milk.

  2. Mix well making sure rice is well combined. Adding milk helps to soften rice and also prevents curd rice from turning sour when kept for long time.

  3. Allow it to rest for 5 to 10 minutes or until its cooled completely. Further, cup curd and salt. Mix well.

  4. Now prepare tempering by heating oil. Add mustard, cumin, Urad dal, channa dal, pinch hing and few curry leaves.

  5. Splutter the tempering and pour over the curd rice. Mix well making sure everything is well combined.

  6. Finally the curd rice is ready garnish with fried red chilli and curry leaves.
