CHICKEN MUSHROOM SOUP

  1. Boil a small pan of water. When boiling put in the chicken breast and boil for 3 minutes. Drain the water and allow to cool.

  2. Cut the chicken strips into thinner strips and set aside.

  3. Pour 500ml chicken stock into a pan on high heat. Add in mushrooms and cook for 2 minutes, the stock should start to boil.

  4. Add in chicken strips. Then add white pepper, soy sauce, salt and sesame oil and boil for 1 minute. Place the lid on and boil for a further minute.

  5. Serve in a bowl and garnish with spring onions.
