CHICKEN LEMON & CORIANDER SOUP

  1. Add all the chicken in a pot and fill the pot with water up to a level where it covers the chicken. Add 1 tbsp. of salt, ½ inch ginger and a few coriander leaves. Let this boil for 15 minutes

  2. Take the chicken out of the pot and let it cool down. Once it cools down, start shredding the chicken using either fork or knife. Meanwhile, add some butter in a pan and add chopped garlic and ginger to it. Along with green chilli slit in half.

  3. Once the ginger and garlic cook nicely, add in 1 cup of chicken stock and about 2 cups of water along with the shredded chicken and bring this to a boil. Season it with salt and pepper and add vinegar. To this, add a corn flour slurry and coriander leaves along with the juice of 2 lemons.
