  1. In a large pan heat 2 tbsp. oil and add Jeera, saunf, hing.

  2. Now add 1 onion and sauté until they turn golden brown. , add ginger and garlic saute it den add green chillies.

  3. add spice powder like turmeric, red chili powder , coriander powder , jeera powder and sauté on low flame

  4. Add 1 tomato and sauté for a minute. Add 400 Baingan (brinjal), salt and mix gently until the spices are combined well.

  5. Cover and cook or until brinjal is cooked well. Finally, add coriander and enjoy Baingan recipe with roti.
