  1. Heat butter - when it is melting add the flour.

    Cook the flour for 3-5 mins then immediately add milk.

    Cook in medium flame, it will bubble. Keep stirring with a whisk. Whisk vigorously until smooth so that there are no lumps forming. It will start to thicken now.

    It will form a smooth creamy paste like consistency, it should coat the ladle, and this is the right consistency.

    Add salt and pepper .If you want you can add nutmeg powder too. Mix well. Now the basic white sauce is ready. You can add cheese if you prefer at this stage.

    Add 1/4 cup cheese to the sauce, mix it and switch off. Now rinse all the vegetables and cook them until soft yet crunchy enough to bite. I pressure cooked them for 2 whistles. Preheat oven at 200 C for 10mins.

    Drain water and add the cooked vegetables to the white sauce. Add oregano herbs and mix well.

    Transfer it to an oven safe baking tray, Sprinkle remaining cheese on top. Bake in preheated oven at 200 C for 20mins or until the top turn’s golden. In last put under salamander for 2 min.
